Vinifica tion:
Organically grown, hand harvested and rigorously sorted before a full
de-stemming. Fermentation in small open fermenters with minimal
sulphur cover and limited hand plunging is finished in vat. The wine
is matured in one and two year old barriques before bottling without
fining or filtration.
