In der Nase intensive Nuancen von Feuerstein, Honig, Nuss und Orangenzesten, zart mit Biskuit und Kräuterwürze unterlegt, ein tolles rauchiges Aroma, das sich immer mehr verstärkt. Am Gaumen stoffig, zeigt eine elegante Textur mit reifem Steinobstaroma, das mit einer zitronigen Rasse brilliant unterlegt ist. Mineralisch mit einer tollen Frische, im Abgang lang anhaltend. Grosses Reifungspotential!
Terroir
• Schist or slate slopes surrounded by garrigue.
• Multiple expositions with strong influences from both the
Mediterranean Sea and the Pyreneés mountain ranges.
• Varieties: Grenache Gris 70% & Maccabeu 30%.
Viticulture
• Fully organic (Ecocert Certified) using biodynamic
techniques. Thus no herbicides, pesticides or systemic
chemicals used in production of this wine.
• Yield: 15 hl/ha, 3 tons per hectare.
• Harvest: Hand harvested in early morning into small
12kg cases. Hand selection of berries when necessary.
Winemaking
• Whole- bunch pressed in wooden basket-press.
• Fermented with indigenous yeasts in barrel (228litre and 500litre)and age d on lees for 14 months.
• No battonage.
• Malolactic completed and less than 0.5g/litre residu al sugar, enabling limited use of
sulphur (15mg/litre free).
• Wine is filtered lightly but not fined.
• Analysis: Alcohol by volume 12.9%; Volatile Acidit y 0.65 g/l; Titratable Acidity 7.8 g/l;
pH 3.10; Residual Sugar <0.5 g/l; Malic Acid .05 g/l
• Closure: 49mm natural cork.
• Packaging: 750 ml bottles in cases of six - flat. 1500 ml magnums.
• Production: Total 3500 x 750 ml bottles and 70 x 1500 ml magnums.
Service
• As with all of our wines will benefit from correct decanting.
• With combination of fresh acidity, moderate alcohol and rich material due to healthy,
low- yielding old vines, the Matassa Blanc can accompany a wide variety of foods.
Will accompany with profit a roast chicken or Mar i Muntanya (catalan chicken and
prawn ragout) and splendid with a well-aged manchego, cheddar or comte cheese.
• This wine will improve with age for at least 8 years if properly cellared.
