Soil: altitude 350 meters; exposure South West; mostly calcareous.

Grape varieties: Sangiovese  50% Merlot 50% . Organic grapes.

Planting density: 4600 plants per hectare.

Kg of grape per plant: 1,2 kg

Harvesting method: manually in crates of 18 kg with transferring and transformation within  60 minutes of the harvest.

Fermentation:  in stainless steel of superior quality AISI 316, at controlled temperature of 28° C max.

Aging period: 18 months in French oak small barrels  (allier, troncais).  Then 12 months in the bottle.

Alcohol: 14.0° vol.

Food and wine pairing: Perfect with red meat and with game. Ideal also with mature cheese.
